• 1 lb chicken breast, diced • 2 tbsp olive oil • 1 onion, chopped • 2 cloves garlic, minced • 1 can (14.5 oz) diced tomatoes • 1 cup chicken broth • 1 tsp dried oregano • Salt and pepper to taste
1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned. Remove chicken and set aside. 2. Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for another minute until fragrant. 3. Stir in diced tomatoes, chicken broth, and oregano. Bring to a simmer. 4. Return chicken to the skillet. Season with salt and pepper. Cover and simmer for 15-20 minutes, or until chicken is cooked through and sauce has thickened. 5. Serve hot with your favorite side dishes.
